The Fuyu persimmon is a non-astringent variety originating from Asia, favored in Central California for its sweet flavor and crisp texture, similar to a firm apple. It can be enjoyed while still firm, with a harvest season from late September to early December. Look for a deep orange-red color and a flattened shape to determine ripeness. Fuyus can be sliced and eaten fresh, remaining firm at room temperature for a couple of weeks before softening.
In contrast, the Hachiya variety is astringent when unripe and must be fully softened to enjoy its rich sweetness and creamy texture. The Chocolate persimmon, known for its dark brown skin and unique flavor, is sweet even when firm and is less common.
